Coconut & Raspberries
Our 4th recipe from Nadiya Bakes is on page 42; covered-all-over lamington cake. Check out below for tips and suggestions. This recipe makes a lovely sponge cake.
Step one
- Ensure eggs are at room temperature
- Secret to a good sponge is not deflating your mixture when adding egg whites
- recipe calls for adding whites in 2 increments, I suggest 3
- fold with rubber spatula very gently until mixture is even
- I baked this cake into 2 square 8” pans instead of one round pan- this will make it much easier to assemble
Step 2 (filling)

Ensure butter is at room temperature ( see photo)

Ensure milk is at room temperature
- recipe calls for mixing all ingredients at once for buttercream filling- I suggest creaming butter first then slowly adding icing sugar (make sure icing sugar has been sifted, or you will have lumpy frosting)
- For more of a raspberry flavour I added 2 tablespoon of raspberry jam before I added the marshmallow
- toast coconut ( I should have used desiccated coconut instead of flaked)
- coconut burns very quickly- per recipe it states 12-15 min / if you bake coconut this long in a 350 oven it WILL be burnt! Watch carefully and bake 7-9 min
Third step (ensemble cake)
- Directions for ensemble per recipe are very difficult and messy, below is what I did
- Start with 2 cakes instead of one
- place coconut in shallow dish in straight line
- place jam in shallow dish
- grab entire cake and push each side into jam then coconut (cake is sturdy, so don’t be afraid to handle)
- Add more jam and coconut to each plate and now squish one cake bottom into jam and then coconut
- I added a jam layer on 1st layer before I added buttercream filling
- place 2nd cake on top of 1st cake and lightly press down
- Using an off-set spatula spread jam on top and sprinkle coconut to completely cover top
The Results
My over all rating is 3 out of 5. I would make this recipe again with above adjustments and a change in filling.
Even with my changes the cake assemble is messy and difficult. I don’t think the jam and coconut are necessary on the bottom of the cake.

The marshmallow buttercream is nice but I would pref a simple whipping cream centre instead.
